1. Oriental spinach varieties have pointed, notched leaves and red roots, while Western varieties have rounded leaf tips. Flower buds form in response to low temperatures and long days, and bolting occurs with warmth and long days. Oriental varieties tend to bolt more easily than Western varieties, so they have traditionally been sown in autumn when daylight is shorter, while Western varieties have been used for spring to summer sowing.

Sowing period: Mid-March to mid-April, early September to late October

Spinach is the most iron-rich vegetable and is also rich in vitamin C, which aids iron absorption. It also contains many vitamins such as carotene, vitamin B1, vitamin B2, and vitamin C, as well as folate and dietary fiber, making it a highly nutritious vegetable.

Oil Leaf Lettuce is said to be a type of wild lettuce, the same as Romaine lettuce, and is classified as a non-heading lettuce. The leaves are long and narrow, and unlike Romaine lettuce, the tips are pointed rather than rounded.

. Oil Leaf Lettuce is recommended for stir-fries, but the young, tender leaves can also be eaten raw.
. Boiled and dressed Oil Leaf Lettuce
Blanch Oil Leaf Lettuce briefly, plunge into cold water, and once cooled, squeeze out excess water and cut into bite-sized pieces. It is delicious when dressed in various ways or served as a simple boiled dish.
. Stir-fried Oil Leaf Lettuce with minced meat.
