Water spinach is very similar to sweet potato leaves and stems. Its leaves are slightly slimy, and its stems are crisp and crunchy. It has a mild flavor and is used in various dishes such as stir-fries and blanched side dishes. It is rich in nutrients like vitamin C, iron, and potassium, and is expected to help combat summer fatigue and aid in recovery.
