Dassai BLUE 50 from NY is a Japanese sake brewed at Dassai BLUE New York Brewery, established in September 2023 by Asahi Shuzo, a brewery located in Iwakuni City, Yamaguchi Prefecture. It uses local water and Yamada Nishiki rice, following the same brewing process as Dassai in Japan.
The name BLUE originates from the Japanese proverb Aoi wa ai yori ide te ai yori aoshi (Blue comes from indigo and surpasses it), embodying the aspiration to brew sake that surpasses the original Dassai.
