Water spinach is a leafy vegetable belonging to the morning glory family, Ipomoea genus, and can be eaten stir-fried or blanched. It originates from tropical Asia and prefers high temperatures and humidity. It is resistant to heat but not cold, and is treated as an annual plant in Japan.

Water spinach is rich in both Vitamin B1 and Vitamin B2, so consuming it can help relieve fatigue. Vitamin E, like β-carotene, is a nutrient with antioxidant properties. It can help prevent lifestyle diseases such as arteriosclerosis and myocardial infarction, and also prevent the appearance of age spots and wrinkles on the skin, which can make you look older.

??Recommended Ways to Eat

. Stir-fries (stir-fried with bell peppers and oyster sauce, garlic, pork, etc.), boiled dishes (simmered with fried tofu, blanched water spinach), salads, steamed water spinach with tuna and ginger.

??Harvesting

Harvest the entire plant when it reaches about 30 cm in height.
Alternatively, when the plant is about 20-25 cm tall, cut off the tips, leaving 3-5 nodes from the base of the stem.
Then, as side shoots grow, harvest them sequentially. Frequent harvesting of side shoots will encourage the plant to branch out and grow vigorously.
