★What is Hoba?★
These are leaves from the Hō (Magnolia obovata) tree, a plant in the Magnolia family.
The leaves are large and have natural antibacterial properties, so they have been used since ancient times as a substitute for dishes or as a material for wrapping food.
Perhaps the most famous use of Hoba leaves is for Hoba Miso, a regional dish from Gifu.
It is a simple cooking method where miso is mixed with chopped green onions, shiitake mushrooms, ginger, and sesame seeds, then placed on a Hoba leaf and grilled. The unique aroma of the Hoba leaf enhances the flavor of the grilled miso.
