These are wild Honmoroko from Lake Biwa. Each pack contains 30 fish, a random mix of females and males of various sizes.
The Honmoroko are flash-frozen to below freezing point immediately after being caught, a process called ikijime (live-killing) that locks in their flavor and freshness. They are then stored at -24°C, ensuring exceptional freshness.
The selling price is 50 yen per fish.

Honmoroko is a species native to Lake Biwa, designated as one of the Eight Delicacies of Lake Biwa. In recent years, their catch has drastically decreased, making them a very rare fish.
They are considered the most delicious among freshwater fish and are a high-class ingredient used in local cuisine at traditional restaurants in Kyoto and Shiga.
