Vintage Chicago Cutlery 78S filleting/boning knife. This classic kitchen tool features a narrow, flexible carbon steel blade designed for precision tasks. Solid wood handle with brass triple-rivet construction. The model number 78S is stamped clearly into the wood. The blade shows significant sharpening wear and a curved profile from years of use. There is green oxidation/patina around the brass rivets as shown in photo 2. Handle wood shows darkening and wear consistent with a frequently used vintage kitchen utensil.
