* Due to hail storms in Wakayama, many plums are damaged or fell before ripening. Like last year, it's a poor harvest, so the overall harvest in Wakayama Prefecture is low, and prices have significantly increased. Therefore, we are revising our prices, but we are selling Grade A products at a very good value.

?? I individually pickle the plums in zip bags by myself. It takes time for the pickled plums to cure beautifully, and we can only make a limited quantity, so this is a limited sale.

We only use plums from our family's farm. We harvest Nanko plums carefully cultivated by my brother and parents. They are salt-cured for about a month with only plums and sun-dried salt. After removing the plums from the barrels, they are dried for 2.5 to 3 days depending on the weather. Then, the plums are flipped and dried for another 1.5 to 2 days to make pickled plums. After that, they are re-pickled with mashed shiso leaves and plum vinegar to achieve a beautiful color.
Each container is pickled with great care, and we use a generous amount of plum vinegar and shiso. The plum vinegar can also be used as a seasoning for grilling fish or meat.
It can also be used in various dishes, such as dressings, mixed with shochu, or as a refreshing dip for fried chicken. Although the expiration date is set to one year, they can be stored at room temperature for a long time and are useful in disaster situations.
