In addition to the classic simmered dish, dried hijiki can be enjoyed in various delicious ways, such as in mixed rice, salads, and dressed dishes. Proper rehydration and cooking will bring out the natural flavor and aroma of hijiki.
Here are some tips for delicious preparation and cooking:
1. Basic Preparation: Proper Rehydration and Cooking
Rehydrating and cooking are key to enjoying dried hijiki. Washing and rehydrating can also reduce arsenic intake.
Rehydration: Soak 10g of dried hijiki in over 1000ml of plenty of water for about 30 minutes (rehydration ratio is about 8-10 times).
Rinse: Drain in a colander, rinse thoroughly with water 2-3 times, and drain well.
Cooking: After rehydrating, always cook by simmering, stir-frying, or boiling.
2. Recommended Delicious Ways to Eat / Recipes
A. Simmered Hijiki (Classic)
This is the most popular way to eat it. It's a traditional flavor simmered in a sweet and savory sauce with soy sauce and mirin, along with ingredients like soybeans, carrots, fried tofu, and fish cakes. Adding ground chicken makes it very satisfying.
B. Mixed Rice (Takikomi Gohan)
Cooking hijiki with rice allows its umami to spread throughout, creating a flavorful rice dish.
Example Ingredients: Ground chicken, carrots, shiitake mushrooms, edamame, dried young sardines, etc.
Cooking Tip: Simply place rehydrated hijiki, other ingredients, and seasonings (soy sauce, sake, mirin, etc.) in a rice cooker and press the cook button.
C. Salads / Dressed Dishes
Unlike simmered dishes, these offer a refreshing taste. Use cooked hijiki.
Recipe Examples:
Tuna Dressing: A simple recipe involves dressing with fried tofu and canned tuna.
Vegetable Salad: Mix with ingredients like cucumber, daikon radish, and other seaweed, and dress with your favorite dressing (ponzu, sesame oil, vinegar, etc.). You can also give it a Western twist with lemon juice or olive oil.
As a dried food, it can last for 2-3 years, but please consume within about 1 year, avoiding direct sunlight and high humidity.
