Sichuan pepper is a spice native to China, made from the dried pericarp of the fruit of a plant belonging to the citrus family, genus Zanthoxylum.
In Chinese, it's called huājiāo, and in Japanese, kashō.
It is frequently used in Sichuan cuisine, and the authentic flavor of mapo tofu found in Chinese restaurants originates from Sichuan pepper.
