Purple cauliflower is richer in nutrients compared to regular cauliflower.

It has the same taste as cauliflower, with no strong flavor and a crisp texture.

[Changes when boiled]

When boiled in a pot, the color deepens compared to before boiling.

When heated in a microwave, the color deepens more than when boiled.

When boiled with vinegar, it turns pink due to the reaction of the pigment, anthocyanin.

[How to eat]
Purple cauliflower can be eaten raw, but it is generally eaten after boiling.
It is often eaten in soups and salads.

[Sowing]

Cauliflower is a vegetable planted in spring (February-March) and summer (July-August). It takes about 3 months from sowing to harvest, which is from late October to late January of the following year.

Optimal germination temperature: 20-25℃
Optimal growing temperature: 15-20℃ (A temperature difference of about 3-5℃ between day and night is desirable)
