Planted in spring, it can be harvested from autumn.
The above-ground parts die back in winter, but it's okay to leave them planted. You can harvest anytime after the first autumn.
No need for preservation; just dig it up when you want to use it and enjoy fresh wasabi anytime.
If you cut the harvested wasabi roots into a few centimeters and plant them, they will regenerate. Even thin, branched roots will sprout.
You can multiply them easily.
The leaves are also delicious.

Plant the seedlings with the growth point just peeking out above the soil. Even if the leaves are bent or cut, as long as the growth point is intact, it will be fine. If it breaks off during shipping or handling and only the root remains, that's okay too. Bury it in the soil, and it will sprout again.

It can grow even in shaded areas.
Wasabi roots grow downwards, so please cultivate the soil well and plant on raised beds. If growing in a planter, use a deep one.
No special fertilizer is needed.
The delicious leaves may become food for insects, but their regenerative ability is amazing, so it's fine.
It grows without any pesticides.
Maintenance is minimal, mostly just weeding.
