① Select the adapter and whetstone according to the type and condition of your knife. Please combine the same type on both the left and right sides.
② Attach the whetstone to the adapter and place it in the groove of the V-Edge body so that it forms a V-shape.
③ Hold the knife horizontally, place the heel of the blade between the V-shaped whetstones. Pull the knife out while sliding it diagonally towards you at approximately a 45° angle between the whetstones. Repeat this 10-20 times. If you have done coarse sharpening, sharpening with a finishing whetstone afterward will result in a sharper edge.
?? Both German knives with different blade angles and Japanese knives can be accommodated by changing the adapter. The adapter can be easily replaced.
