This is a repaired yanagiba knife that was scheduled for disposal. All rust has been removed, and a new octagonal handle has been crafted from domestic (Wakayama prefecture) cypress wood and attached. The knife will be shipped with a sharpened edge, ready for immediate use.
Blade length: 110mm, Blade steel material unknown (Japanese steel, equivalent to yellow paper steel)
Grip: Original octagonal handle made from domestic cypress wood
Details: This is a repaired item from a sushi chef's disposal request. The cypress octagonal handle is original. Waterproofed with water-based urethane varnish.
