This knife is designed for filleting fish, i.e., for cutting fish into three pieces and preparing fillets. The flexible blade is thin and curved, allowing it to follow the fish's backbone. This makes it easy to separate the flesh from the bones without cutting into the bones, resulting in clean fillets.
As shown in photos 11 and 12, it can also be used as a butcher knife.
