Currently, new ones are selling for around 27,000 yen on Amazon.
Besides processing bone-in meat, it can also be used as a deba knife for filleting fish, so it has various uses.
I used it for filleting fish, but I have several deba knives, so this one didn't get much use.
The back side is flat-ground, similar to a single bevel. The sharpness is excellent. Since it's flat-ground, there are some sharpening scratches on the back.
It doesn't rust, and the 440a steel holds an edge reasonably well.
The finish was done with a 5000 grit whetstone, and it has been stored since then. It's ready to use immediately, and since it hasn't been sharpened many times, the blade hasn't worn down much.
The micro-bevel is only thinly applied, so when cutting fish bones etc., please re-apply a thicker micro-bevel.
