Description
This is a knife used for filleting eel.
The blade is sharpened at a very acute angle.
I used it for cutting raw tuna into blocks.
I was able to cut it into cubes without worrying about the belly bones.
It also cut through the back筋 without any issues.
There are some signs of sharpening and minor scratches,
but they do not affect its use.
I'm not knowledgeable about the steel type, so I'm not sure,
but I believe it's stainless steel as it doesn't rust.
This is a used item, so please do not expect perfection.
It will be shipped wrapped in newspaper and packed in a cardboard box, as shown in the last photo.
