Tosa Kitchen Knife - Tsukasa - Refurbished Used Item

This was originally a kuro-uchi (blacksmith finish) knife, but most of the black finish has been removed due to rust removal.

The handle collar is made of marbled plastic, but there is a molding defect. Please check the photos. It fits securely, so it doesn't seem to cause any problems.

There may be some of the original iron surface remaining, but there are quite a few rust marks.

There was a hole at the end of the handle, possibly from attaching an iron hook, which has been filled with wax. Please check the photos for this as well. The outer circle is a wax stain.

The sharpening process started by straightening the cutting edge with a #220 grit whetstone, followed by #400, #1000, #3000, and #8000 grit whetstones.

According to the previous owner, the core material is Shiroichi (White Steel No. 1), but it's a bit ambiguous. The inscription and shape match a product sold on Amazon, which lists it as Shiroichi.

It's prone to rust and hard, but it sharpens smoothly against the whetstone, and the burr seems to peel off easily, which aligns with the characteristics of Yasuki white steel. However, it doesn't feel as hard or sharp as Shiroichi. This could depend on the tempering strength or my sharpening ability, so I cannot say for sure.

There is a cutting edge on both sides. It was originally made with a蛤刃 (hamaguri-ba - clam-shaped edge) style, so I have followed that by giving the tip an angle greater than the cutting edge.

The handle has been polished with a file, and the insertion point has been filled with wax.

It is likely a laminated knife.

The sharpening was done as a hobby, so it is not perfect. Also, the steel is prone to rust, so rust may appear during shipping. Please be aware of this in advance. It will be shipped via Nekoposu (a type of postal service).
