Description
The Zuiun, a 100th Anniversary Commemorative Model.
Our founder, First President Matsujiro Kawamura, is a descendant of the swordsmith Kaneji. Striving to create products that embody the characteristics of Seki-style Japanese swords – unbreakable, unbendable, and sharp – we have developed the Zuiun kiritsuke-style knife, meticulously crafted for a sharpness reminiscent of a Japanese sword.

[Special Kiritsuke Knife]
The special kiritsuke knife Zuiun is a hybrid of an usuba and yanagiba knife. Unlike traditional single-bevel kiritsuke knives, this is finished with a double bevel, allowing the blade to enter the material straight. It is versatile for a wide range of ingredients, including meat, vegetables, and sashimi.
Furthermore, the pointed tip, shaped like a sword, makes it suitable for decorative cuts and other culinary techniques that utilize the tip of the knife.

[Blade Material]
Crafted from 63 layers of Damascus steel with a core of SPG2 (Super Gold 2), a high-grade, difficult-to-obtain cutlery steel. The beautiful patterned blade is highly popular both domestically and internationally.
The core material, SPG2 (also known as Powdered Stainless High-Speed Steel), excels in all four essential qualities of cutlery: high hardness, high toughness, wear resistance, and corrosion resistance.

[Sharpness]
Superior cutlery steel is finished into a convex-ground blade, the shape of a Japanese sword.
This ensures exceptional sharpness and its longevity. It is also easy to re-sharpen.

[Heat Treatment]
A special sub-zero treatment, involving cooling below -70°C after quenching, imparts high hardness and toughness, achieving the unbreakable, unbendable, and sharp qualities.

[Handle Material]
The handle is made of 7-sided laminated reinforced wood, designed for a comfortable grip and a sense of Japanese aesthetics.
Decorative elements are incorporated where they are visible when held, creating a luxurious and stylish design.

[Occasions]
Comes in an elegant paulownia wood box, with an optional saya (sheath) available.
Zuiun means auspicious clouds appearing as a sign of good fortune in Buddhism, making it a fitting name for our 100th-anniversary model. It is also a perfect gift.
