Bonito shaver Iroribata Umami using Fujishuu blade.
A genuine shaver with a box made of ash wood and a plane base made of oak.

The Fujishuu bonito plane blade is a steel-bonded plane blade. Steel-bonded blades are sharp.
The feeling of shaving is gentle and soft.

This product uses the same box material (ash wood) and Fujishuu blade as Katsuo-bako Katsuo no Sato, but the box is smaller and the plane base is made of oak.

The shaved powder can be used as a natural furikake (seasoning) for rice or added to miso soup to greatly enhance the flavor - highly recommended.
The flower shaped shavings are a great pairing for tofu or ohitashi (blanched greens)! Also highly recommended for tamago kake gohan (rice with raw egg).

Bonito is divided into male (back side) and female (belly side) sections.
One bonito yields a total of 4 dried bonito pieces: 2 male and 2 female.

Male Section (Back Side)
When dried, it has relatively little distinct flavor and a stable taste.
Male sections are easier to shave for those new to it.

Female Section (Belly Side)
Being the belly, it has more oil content and tends to become powdery when shaved.
However, many people prefer the taste of the female section, so please enjoy shaving it as well.
