Citric acid is the component that gives fruits like umeboshi, citrus fruits, and lemons their sour taste, and is also found in vinegar. It's the sour component of fruits, easily soluble in water, and its aqueous solution shows a pH of 2.1 (2%, 20°C), indicating acidity. There are two types of citric acid: crystalline citric acid and anhydrous citric acid. Crystalline citric acid has one molecule of water bound to each molecule of citric acid, containing about 91g of citric acid per 100g. Crystalline citric acid often hardens due to the presence of water. Our citric acid is anhydrous, meaning it has no bound water molecules, so it contains approximately 100g of citric acid per 100g. Citric acid can be used in various ways, including beverages, beauty applications, cleaning, and food processing. It is also very safe and is currently used for a wide range of purposes.
