◇What is Silpat?
Baking paper is used up quickly, so the cost is a concern, but Silpat can be used semi-permanently and results in a stunningly beautiful bake.
This is a non-perforated sheet, making it ideal for batters that are soft and fluid, such as those for macarons and dacquoise. It provides gentle heat from below, so macarons and dacquoise that might crack from strong bottom heat are less likely to crack and bake beautifully.
*This is not a mesh-type Silpat.
