● Father's original. A set of soba-making tools including a custom-made cutting board. This is a rare find.

【① Soba Kiri Knife】
Kiya is a long-established Japanese cutlery store that has been in business since the Edo period.
Traditional Japanese soba-kiri / men-kiri bocho (soba/noodle cutting knife) shape.
Steel blade, with tape wrapped around the handle. Can be used for soba, udon, and other noodles besides soba.
In addition to the knife, a handmade bamboo spatula from my father is included. This is a tool for scraping excess flour off the knife. It is made of bamboo, so it is firm but will not scratch the knife.

【② Cutting Board for Soba Cutting】
This was custom-ordered from a carpenter acquaintance. It is a colossal size with a wide width, allowing you to place the stretched and folded soba directly on it. It has stoppers on the bottom to prevent it from slipping when placed on a rolling mat. It is a custom order, so it is very rare.

【③ Koma-ita】
Custom-made wooden koma-ita. Also known as a soba-cutting ruler.
Used when cutting soba to adjust the cutting width over the folded dough. It is used by pushing and sliding the knife, and the part where the knife hits has been processed for ease of use.
Also, when the amount of soba to be cut becomes small, the koma-ita tilts diagonally. In such cases, an adjuster can be attached to allow for clean cutting until the very end. Commercial products cost around 3,000 yen.

Custom-made wooden rolling pin. Approximately 91cm in length and 3cm in diameter.
