The dough made with Soba Raku has less contact with air, allowing you to make flavorful and delicious soba noodles.

1. Water Mixing
Water mixing, which is very difficult in soba making, can be done successfully even by beginners without failure using this water mixer, which drips water finely and has the effect of 6 claws.

2. Kneading and Combining
Form the water-mixed soba dough into individual portions, place them into the main cylinder. Simply turn the handle back and forth 2-3 times. The soba dough inside the cylinder will be kneaded into chewy noodles that don't break.

3. Making Ahead
When making for multiple people, you can push out the dough up to the kneading stage from the exit and make it ahead, preparing for the next steps (extruding, boiling, and plating).

4. Extruding and Boiling
Once the lever is moved to the extruding side, change the exit to a perforated die and turn the handle to directly extrude the noodles into boiling water and cook them.
Boil for about 50 seconds, then cool in cold water and plate.
Since they are fresh noodles, they are boiled quickly at high temperature for each serving. This results in flavorful soba noodles.
