Pichitto is a magical cooking sheet that enhances the deliciousness of ingredients. The secret of Pichitto lies in its osmotic pressure power, which is created by two special semi-permeable food-grade films with invisible pores, and the ingredients sandwiched between them: a water-soluble candy component with high osmotic pressure and seaweed components (gelling agents) that retain absorbed moisture. This osmotic pressure removes excess moisture from seafood and meats wrapped in Pichitto, as well as fishy-smelling components like ammonia and trimethylamine, which have smaller molecules than water. Meanwhile, it traps larger molecules of umami components within the ingredients, concentrating them tightly!
